Shrimp and angel hair pasta

Shrimp and pastaImpress your date with this quick, flavorful, colorful and easy to cook dish!

Preparation time: 10 minutes
Servings: 2

Ingredients
1 tablespoon olive oil
1/2 lb frozen cooked shrimp
2 fresh tomatoes, cubed
1 clove garlic, chopped
parsley, chopped
salt, pepper
Parmesan cheese
1/3 lb  Angel Hair pasta (aka Spaghettini)

Directions
Bring a large pot of water to a boil, add salt.
Thaw frozen shrimp in colander under warm water for 5 minutes.
Heat olive oil in a skillet, add garlic and cook for 1 minute.
Add shrimp and tomatoes.
Cook for 5 – 7 minutes, stirring occasionally.
Add salt, pepper to taste.
Cook pasta according to package directions. Drain and toss with the shrimp sauce.
Garnish with parsley.
Serve with Parmesan cheese.

Chef’s Note:
Cooked shrimp can be substituted with frozen raw shrimp. Defrost in water and peel before cooking. Allow more time to cooking before adding tomatoes.
Substitute spaghettini with linguine pasta or spaghetti if desired.
