Ingredients

Tip:  If you run out of peppers, but still have some stuffing left, simply form it into meatballs, place around the stuffed peppers, and cook them all together!

  • 6-8 green, yellow or red peppers
  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup rice, uncooked
  • 1 large cooking onion
  • 2 jars Ragu pasta sauce
  • Salt and black pepper to taste

Preparation

  1. Wash and scoop out insides of peppers. If the peppers are large, cut them in halves.  Peppers can be cut across or lengthwise
  2. Cook one cup of rice in a rice cooker until ready, cool
  3. Cut one cooking onion into small pieces and sauté in a skillet until ready
  4. Preheat oven to 375 F
  5. Mix ground beef, pork, onion, rice, salt and pepper
  6. Place stuffing in the peppers.  Don’t pack too tight
  7. Arrange stuffed peppers in a deep baking sheet or in a large cooking pot
  8. Pour tomato pasta sauce over peppers, enough to cover
  9. Cover with a lid or aluminum foil and cook in the oven for about 40 minutes.  Uncover and continue cooking for another 20 minutes or until ready

Stuffed peppers will taste even better if served on the next day, allowing the flavors to develop
